Wicklow Wolf
Nato nel 2014 poco a sud di Dublino, Wicklow Wolf è la creatura di Quincey Fennelly e Simon Lynch. Da sempre producono birre con un particolare occhio di riguardo nei confronti della sostenibilità, privilegiando l’uso di energia prodotta con pannelli solari. Con la stessa filosofia hanno deciso di investire nella creazione di un luppoleto, il primo in Irlanda a destinazione commerciale da oltre 20 anni. Circa 4 ettari dove nascono oltre 12 varietà diverse di luppolo tra cui Chinook, Cascade, Perle, Fuggle, Challenger e Apollo. In birrificio si producono gli stili classici della tradizione locale con una spinta piuttosto moderna sull’uso dei luppoli. La core Line, Alpha Pack, comprende profumate IPA e Pale Ale, tostate Stout e morbide Red Ale, a cui si aggiungono le produzioni in Limited Edition della serie Endangered Species e le collaborazioni della Crossbreed Series.
